Just picked up DDR Max 2 and Extreme for ps2. What exactly does turning the workout steps on do, and is this better for a heavier workout? And how long should I be working out nightly for great results?

Turning workout steps on removes freeze arrows and eigth notes. It's designed to give you a more consistent level of motion for your workout, but it does make the songs easier to pass.
30-45 minutes 3-5 nights a week is a good rule of thumb for play time.

As someone who has experience with doing most of my game with workout steps, I'd highly recommend turning them off. I was able to get to the heavy mode in a few weeks. Now I turned workout steps off and I have to go back to Standard mode. It may be easier with workout steps enabled, but since it is not much of a challenge. It gets kinda repetitive easily.

Go into options, and select "Dancer Options".. there aren't as many settings to select from compared to Extreme, but if you're bent on customizing the character to any level, that's where you do it.
