Hi everyone,
Hope you all are heading straight toward your goal! I know that I like to eat a lot of salad on my diet, veggies rock. If anyone has any neat salad ideas, anything at all, wacky or just good tasting, post the recipe here.
The salad I usually make is just: Organic lettuce Radishes (chopped into small cube-like peices) Babby carrots cut in half Small slices of celery Ripped peices of red cabbage
for dressing: Black pepper Olive oil( only a very small amount) Lemon juice (fresh squeezed tastes best)
It is pretty tasty, so if anyone gives it a try, let me know how you like it.
So, any other ideas?

I go with a mix of spinach and regular lettuce, carrots, peas, tomatos, cheese, egg whites from hard boilded eggs, chick peas, beans, and croutons. I like raspberry or blueberry (super hard to find though) dressing, but lately I've also enjoyed honey dejon dressing (or something like that.) Its really fresh tasting.
I like everything on my salads. ;D

Those ideas sound great. I also found a neat fruit salad idea.
Chopped up mango chopped strawberries chopped apple cut up nectarine sliced banana tangelo, orange, or tangerine slices
you can add a little sprinkle of sugar or splenda if you like. It taste great and is a nice change from traditional veggie salad.

OMG, have I got a salad for you. I just had this at a local gourmet italian restaurant by my house, and it was so incredible that I've already made it at home twice! Just the idea of fruit in my salad kinda skeeved me at first, but I'm sold on this one... it was incredible!
mix all together:
mixed field greens sliced strawberries blueberries a little crumbled gorgonzola cheese walnuts (optional) a little balsamic vinegar.

Bean salad (vinegary-sweet dressing with kidney, green, wax, and chickpeas) is nice for a change from the usual leaf-based salad.
Fruit- diced apples (with peels), bananas, orange (slices cut into 1/3s), grapes, peaches(or nectarines) and a couple maraschino cherries. Lemon juice to slow the fruit getting brown, and a little vanilla and you're good to go. Any in-season berries are good to add too.
I find that mixing types of things in garden salad is best. broccoli and cauliflower aren't great in the same salad, and lettuce mixes much better with spinach than with other lettuces.
