I'm a big fan of DDR Konamix on PSone and I'm thinking about getting a PS2 to be able to play the updated versions of the game.
I'm especially interested in the workout mode and I want to be able to automatically go from one song to the next until I reach a specific amount of time or calories burned without having to choose the next song.
Do any of the PS2 versions support continuous mode like Konamix does?

Well, no, not in the manner you're describing. The workout modes on MAX and MAX2 allow you to play to a specific goal (calorie or time), but you have to select the songs in between. They have the Nonstop mode, but it doesn't track calories or time. Workout mode on Extreme will track calories in Nonstop mode, but it won't stop at a set calorie or time goal.
No word on how the workout modes will work on In the Groove.

Thanks! I really appreciate the feedback. I borrowed my friends PS2 and DDR Max and was very surprised to see that they took out the continuous workout mode. I can't understand that, in Konamix it's so nice to be able to workout without having to stop and pick the next song; there are just a few brief seconds before the next song starts automatically.
On a related note the continuous workout option was also taken out of Ultramix for Xbox. I'm not sure about Ultramix 2.

continuous workout IS in fact in ultramix 2.
*however I don't believe you can set it to a time or calorie count when to stop....if you can I never saw it...*

No, Max2 doesn't have a continuous workout mode. Read the thread again.
