One day will not make or break a diet. You can splurge at the holidays, and yes, you will gain a pound or two at the most. But in my experience it comes back off rather easily. The trick is to only make it a one time deal, not pig out at dinner, then go back later that evening for a turkey sandwich, and ooh! while I'm here I'll get some mashed potatoes and gravy.
If the splurge is one night, it's no biggie. If it's from Thanksgiving to New Year's, that's another story.

I prefer to only eat the things that I really like and skip the things that I don't really care for. It is possible to lose weight through the holidays. Eat small portions of everything that you love and keep it at that.
Unless you're planning on dying, you'll get a chance to eat all this food again next year.

So the "splurges" you can do like once a year or so? I just wanted to know before I change mystate of mind from "gimme food" to "hmm that chicken looks good, but a peice is good enough for me".

Depends on the splurge. If you start eating less and healthier, you'll find two things. 1. You can't eat as much when you splurge and 2. Splurging on unhealthy food or overeating in general leaves you feeling like total crap. The goal here is to change your typical eating habits. There are no real hard and fast rules to it.
