If you download Stepmania you can get simfiles for every song on every mix... but yea it would be kinda neat if they released one ultimate mix.

It'll never happen, unfortunately. Konami was very short-sighted with their music licensing, and tended to only license the songs for one mix in Japan. Saved them money in the short run, but prevented them from being able to bring some of the better DDR songs over here legally. (Speaking of legality, Stepmania simfiles are bad, mkay? Just had to put that reminder in)
Space wise, they could fit all US playstation releases on one PS2 disc (The images for Max, Max2, and Extreme are about 1Gig each, PS2 discs can hold up to 9Gig), but again, the song licensing costs would eat them alive. They won't do it until one of their competitors starts raising the bar for number of songs on a release (Come on Andamiro and Roxor, you can do it!)
